Recipes No 4 Fajita filling with vegges

Red,yellow, orange and green Bell Pepper - 1 each
Green and Yellow Zucchini - 1 each
Carrot- 1

Cut these vegges into thin strips, vertically about 2 inches long. Marinate the vegges by mixing them with the ingredients listed for marination. Mix the marination mixture very well that it covers all the vegges and keep it aside for about 15 - 20 min. Now heat the skillet, add little amounts of marinated vegges so that there is only one layer of vegges in the skillet. Spread them well, saute it for about 4 mins till they turn light brown on the sides of the skin. Repeat for the rest of the vegges. Do not waste the water that comes from the vegges at the bottom of the bowl. They contain lot of flavors , then just pour it over the cooked vegges and mix well.

Rice- 1 cup
Tinned Tomato paste - about 2 tbsp
Tinned Tomato puree - 1 tin
Fresh cut Roma tomatoes- 2 to 3

Close the pan with the lid and allow the rice to cook well. Stir occasionally for every 7 minutes. Add water as required or when the pan becomes dried. Once the rice is cooked well, garnish with fresh coriander.

Now comes the dessert part .
